Notes of citrus fruit, cinnamon, and almond. Mexico Chiapas Honey Process is a light roast part of our Micro-Lot Series. These coffees are small-batch, specialty roasts that we only have a limited amount of.

This coffee is produced in the picturesque region of Chiapas and sourced by Cofincaf who works with over 3,000 producers across Mexico providing high quality, hand-picked green coffee. In the honey processing method, coffee cherries are pulped and the beans are dried along with the fruit pulp, or mucilage. The mucilage is similar to honey, giving the process its name. The beans are dried in the sun and become sweeter as the mucilage absorbs natural sugars from the beans. This process uses less water compared to other de-pulping methods before milling.
